sticky rice cakes coated caramel

my favorite Indonesian snack, we called it gemblong, it is perfect for coffee-time, a sip of coffee and a bite of this gemblong, such a perfect match.

here is the recipe for sticky rice cakes coated caramel (gemblong) :

250 gr glutinous rice flour

150 gr desiccated coconut

25 gr butter / margarine

40 gr castor sugar

200 ml hot coconut milk

1 tbsp water

2 tsp salt

oil for frying

glutinous rice flour-desiccated coconut

combine the flour, desiccated coconut, butter, castor sugar, water and salt, mix well. Add in hot coconut milk gradually and mix well until the mixture resembles a dough. Roll into balls, then deep fry until golden brown. Remove and drain well.

when all finish, coat them with the caramel.

here is the recipe for the caramel :

150 gr palm sugar (because there is no palm sugar in the city I live in, so I substitute to Treacle sugar, it contains cane sugar plus 7% molasses syrup, which is smell just like palm sugar)

75 gr white sugar

50 ml butter / margarine

1 tbsp water

treacle sugar (molasses syrup)

put all ingredients in a saucepan on a medium heat until bubbly and thicken. Lower the heat add in the sticky rice fried cakes. Mix well to coat the cakes evenly. Remove and cool.
